ItalianIn this episode of Sugar-Free Sundays, Chef Sanjeev Kapoor brings you one of Italy’s most loved desserts OG Tiramisu, made lighter and completely guilt-free.
Preheat the oven at 180℃.
To make the chocolate sponge, take refined flour in a bowl. Add cocoa powder, baking soda and baking powder and mix well.
Add Sugar Free Green Stevia, yogurt, oil and milk and mix well.
Add vanilla extract and mix again. Transfer the mixture in a greased baking tray and spread well. Bake for 12-15 minutes. Allow to cool completely.
Meanwhile, take mascarpone cheese in a bowl. Add Sugar Free Green Stevia, whipped cream and mix. Transfer the mixture in a piping bag.
Demould the cake cut into 2-inch roundels. Dip the roundels in coffee decoction.
Pipe some mascarpone cheese mixture in individual glass cups and place 1 cake roundel in each cup.
Pipe some more mascarpone cheese mixture on top and place another cake roundel on top. Pipe some more mascarpone mixture. Top up with another roundel of soaked cake roundel.
Finally pipe some more mascarpone cheese mixture on top. Dust cocoa powder on top, garnish with chocolate triangles and serve.
Do not over-soak the cake pieces – a quick dip is enough. Over-soaking will make them too soggy and the layers will lose their structure.
