Step-by-Step instructions for how to make Éclair Rolls With Chocolate Cream

Step 1

Heat 1 cup water in a nonstick pan. Add butter, Sugar Free Natura and once the butter melts, add refined flour and mix well. Cook on medium heat for 4-5 minutes.

Step 2

Transfer the mixture in a bowl and allow to cool slightly.

Step 3

Preheat the oven at 210°C.

Step 4

Meanwhile to make the filling, take sugar free chocolate in a bowl and melt in the microwave for a minute on high heat. Heat the fresh cream in microwave for 30-40 seconds.

Step 5

Add fresh cream to melted chocolate and mix well. Refrigerate for 15-20 minutes.

Step 6

Add eggs one by one to the refined flour- butter mixture and beat well to incorporate. Add vanilla extract and mix well. Rest for 10-15 minutes.

Step 7

Transfer the mixture in a piping bag and pipe swirls on a baking tray lined with silicon sheet. Apply little water on the peaks to settle.

Step 8

Bake in preheated oven for 10-12 minutes. Lower the temperature to 180°C and bake for 10-12 minutes more. Allow to cool.

Step 9

Add Sugar Free Natura to whipped cream and fold in half the chocolate- fresh cream mixture and mix. Transfer the mixture in a piping bag fitted with a plain nozzle.

Step 10

Make hole at the base of each baked choux paste roll and pipe the whipped cream mixture in the cavity.

Step 11

Dip the rolls in remaining chocolate- cream mixture and sprinkle some almond flakes on top. Allow the chocolate to set and serve.

Cooking Tips

Stir the flour mixture over heat until it forms a smooth ball and pulls away from the pan. This “drying” step is crucial for a hollow shell.
