Step-by-Step instructions for how to make Blueberry Gelato

Step 1

Heat a nonstick pan. Add blueberries, 1½ tbsps Sugar Free Green Stevia and salt and cook until the berries are pulpy and the mixture slightly thickens. Set aside to cool.

Step 2

Heat milk in another nonstick pan. Add cornflour slurry and cook on medium heat till the mixture is thick. Add remaining Sugar Free Green Stevia and mix well.

Step 3

Transfer in a bowl and allow to cool. Add cooked blueberries to milk mixture and mix well. Add whipped cream and mix well.

Step 4

Transfer the mixture in ice cream churner and churn for 45 minutes or till frozen.

Step 5

Scoop, garnish with fresh blueberries, mint sprigs and serve chilled.

Cooking Tips

Use ripe, fresh blueberries for the best flavour.
