TurkishIn this first episode of Sugar Free Sundays, Chef Sanjeev Kapoor brings you a rich and indulgent twist on a classic Turkish favourite – Baklava Rolls, made lighter and completely guilt-free.
Preheat the oven at 180˚C.
Place a phyllo sheet on worktop, apply some butter and sprinkle some refined flour on top. Repeat this process till all the phyllo sheets are used up.
To make the filling, take pistachios and walnuts in a bowl. Add 2 Sugar Free Green Stevia Sachets and ½ tbsp butter and mix well.
Spread the nut mixture evenly on one side of layered sheets and roll tightly.
Grease a baking tray with butter. Cut the roll into ½ inch thick pieces, place on the baking tray and bake for 10-15 minutes.
To make the syrup, heat a shallow nonstick pan. Add remaining Sugar Free Green Stevia Sachets and cook till it dissolves. Add cornflour slurry and cook till mixture thickens.
Remove the baked baklava from the oven and add drizzle prepared syrup on top. Sprinkle pistachio powder on top and serve.
