DessertAlmonds are considered rich, luscious and nutritious. They are a staple in many desserts especially those which are made during festivals. One such recipe is Badam kheer. Soak washed almonds in boiling hot water for 30-40 minutes.
Peel the almonds and set them aside.
Chop 3-4 soaked almonds and add the rest in the grinder jar.
Along with the almonds, add Sugar Free Natura, cardamom seeds and ⅓ cups milk. Grind until smooth.
Add 2 ½ cups of milk in a heavy bottomed pan, keep the pan on low flame and let it come to boil. Stir regularly to avoid milk scorching at the bottom.
Add saffron strands and mix. Let the milk cook on low flame for 3-4 minutes.
Add the almond paste and mix very well.
Let it come to a boil. Let the milk collect on the sides.
Turn the flame off. Scrape off the collected milk from the sides and add it back to the kheer. It’ll enhance the texture.
Garnish with chopped almonds for extra crunch. Serve the badam kheer warm or cold, enjoy!
