Preheat oven to 180°C.
Sift refined flour, baking soda and salt in a bowl. Slit vanilla pod and scrape the vanilla pulp out of it, add it to flour.
Add soya milk and mix to ensure there are no lumps. Add Sugar Free Natura Diet Sugar and mix again. Add oil and mix well.
Add vinegar and mix lightly as the batter gets fluffier. Pour batter in a greased and lined loaf tin.
Place the tin in the preheated oven and bake for 40-45 minutes.
Allow to cool, cut into slices and serve.
