Pistachio Ice Cream is made with coconut milk, pistachios and a perfectly sweet alternative to sugar – Sugar Free Natura Diet Sugar. Topped with crispy Kunafa, it adds to the flavour and the surprise! Let’s try this easy and healthy Pistachio Ice Cream with Kunafa
Take coconut milk in a bowl. Add corn-starch and whisk well.
Heat a non-stick pan. Add the coconut milk mixture and cook on low heat till mixture thickens. Add Sugar Free Natura Diet Sugar and mix well. Allow to cool.
Transfer pishori pistachios in a blender jar, add ripe banana and blend coarsely.
Add blended mixture to coconut milk mixture. Mix well.
Take an airtight container, pour the ice cream mix, sprinkle pistachio slivers over it and freeze for 8-10 hours.
Scoop and transfer in individual ice cream cups, top up with toasted kunafa.
Sprinkle pishori pitachios and dried rose petals and serve chilled.
