While it is normally made with dates and jaggery, this recipe uses Sugar Free Natura to cut down calories and make it diabetic-friendly! Made with singhara atta, dry fruits, peanuts, and Sugar Free Natura, this peanut laddu recipe is ideal for offering as prasad or enjoying as a festive snack.
In a pan dry roast peanuts till golden brown. Ensure that you keep the flame low for the whole nut to become crunchy.
Let them cool slightly. Once cooled, remove the skin from the peanuts and set them aside.
Add the peanuts to a blender and pulse until you get a coarse powder.
In a pan, heat ghee. Now add singhara atta and cook until it becomes brown in colour and it starts separating the ghee.
Once the flame is off, stir the powdered peanuts into the ghee mixture. Mix well.
Now add the grated coconut, Sugar Free Natura, dry fruits, cardamom powder and melon seeds.
Mix and then roll the mixture into laddus.
