Prepare the Ingredients
Carefully measure all ingredients and keep them ready to start preparing. Avoid any last-minute runs.
Cook Besan and Ghee
Take a heavy bottomed pan and pour ghee into it. Heat it on a low flame. Slowly, add the besan. Keep stirring it continuously to avoid lumps. Let the besan roast until it becomes aromatic and turns a golden-brown colour. Keep stirring it to ensure it doesn’t stick and burn.
Prepare Sugar-Free Syrup
In another pan, mix water and Sugar Free Green. Heat the mixture until it reaches a syrupy consistency, approximately the soft-ball stage. Use a candy thermometer, it can help achieve the accuracy.
Combine and Cook
Slowly add the sugar-free syrup to the roasted besan and ghee mixture, stirring continuously to avoid lumps. Add cardamom powder for flavour. Continue to cook on low heat and keep stirring constantly. Wait till the mixture thickens and starts leaving the sides of the pan.
Set and Cut
Pour the hot mixture onto a greased tray. Use a spatula to smoothen it and garnish it with chopped nuts. Allow it to cool slightly before cutting it into diamond-shaped or square pieces.
